one pot meal tomato and rice chicken

What’s higher then a scrumptious  ONE POT meal..tomato rice and chicken 


  • 6 chicken thighs , pores and skin on, bone in
  • 1 tablespoon olive oil
  • 2 cloves garlic , chopped
  • 1 onion , diced
  • 1 purple bell pepper (capsicum) , deseeded and chopped
  • 1/3 cup solar dried tomato strips in oil , chopped (non-obligatory: however provides flavour)
  • 1 1/3 cup raw lengthy grain rice , rinsed (arborio rice may be used for a risotto-like consistency)
  • 14.5 ounce (400g) tin crushed tomatoes, with liquid
  • 1 3/4 cups chicken broth (or chicken inventory)
  • 1-2 teaspoons salt (regulate to your style)
  • 1/2 teaspoon pepper , (regulate to your style)
  • 1 teaspoon dried basil
  • 1/4 cup recent basil leaves , chopped
  • additional chopped recent basil (to serve)


1  Preheat oven to 200°c | 400°F. Warmth the oil in a big, deep ovenproof forged iron skillet/or pan (over 30 cm or 12-inches). Add the chicken, pores and skin facet down; sear for 3-4 minutes on medium-high warmth. Flip every thigh and sear till golden throughout. Switch the chicken onto a heat plate


2  Add the garlic; fry till aromatic (about 30 seconds). Add the onion and purple peppers / capsicum; fry for about 3 minutes or till and onion is clear. Stir within the solar dried tomatoes, rice, crushed tomatoes and chicken broth (inventory). Season with salt, pepper and dried basil. Deliver to a simmer and enable the rice to absorb all of the tomato flavours

3  Place chicken thighs, pores and skin facet up, over rice. Deliver to the boil; rotate the chicken within the tomato sauce to coat; cowl with foil; switch to preheated oven and enable to bake for about 40 minutes, or till the rice has softened and absorbed the liquid and the chicken is cooked by means of. Stir by means of an additional 1/4 cup of water to the rice ONLY if wanted (if rice hasn’t cooked absolutely).

4  Take away cowl; change oven settings to broil / grill on medium warmth for an additional 8-10 minutes or till the chicken is crispy and golden.

5  Season with additional salt to style; sprinkle with freshly chopped basil to serve
