  • 1 massive head cauliflower, trimmed of thick tough leaves
  • 2 tablespoons water
  • 1 cup plain whole-milk strained (Greek-style) yogurt
  • 1 teaspoon scorching sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  •  teaspoon pepper
  • 3 slices center-cut bacon, cooked and crumbled
  • ¾ cup shredded sharp Cheddar cheese, divided
  • 2 tablespoons chopped contemporary chives or scallions, plus extra for garnish
  • Potato chips and/or crudités for serving (elective)
