AVOCADO BREAKFAST BOWL

INGREDIENTS :

  • 1 pound candy potatoes, lower into 1-inch items
  • 1 tablespoon olive oil

  • 1 cup quinoa
  • 2 cups child spinach, coarsely chopped
  • 2 small avocados, diced

Instructions:

  1. Warmth the oven to 425°F. On a big rimmed baking sheet, toss potatoes with oil, salt and pepper. Prepare in a single layer and roast till golden brown and tender, about 20 minutes.
  2. In the meantime, prepare dinner the quinoa in accordance with bundle instructions, then fluff it with a fork.
  3. Divide quinoa amongst 4 bowls, then prime with spinach and potatoes. Add avocado, 1 egg, cheese and lemon wedge to every serving and sprinkle with seasoning.
