CHARRED CORN SALAD

TOTAL TIME: 35 MINUTES • FOR 8 PEOPLE

Corn is likely one of the hottest cereals on the earth and a very good supply of nutritional vitamins equivalent to B6, folic acid and potassium. A little bit arctic char on these ears is an epic addition to this salad.

INGREDIENTS :

  • 1/2 small purple onion, finely chopped
  • 1 purple pepper, seeded and chopped
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • Kosher salt
  • Black pepper
  • 6 ears of corn, shelled
  • 3/4 cup cilantro, chopped
  • 3 ounces queso fresco, crumbled

Instructions:

  1. Warmth the grill to medium warmth. In a bowl, mix the purple onion, chili pepper, lime juice, oil and ½ teaspoon of salt and pepper.
  1. Grill corn, turning often, till charred, 10 to 12 minutes. Depart to chill, then minimize the ears of corn.
  2. Add to onion combination and stir to mix. Stir in cilantro and queso fresco.
