GRILLED CARROTS

TOTAL TIME: 25 MINUTES • FOR 6 PEOPLE

The combination of creamy Greek yogurt and tahini, a savory condiment constituted of sesame seeds, provides zest to the smoky and spicy carrots.

INGREDIENTS :

  • 2 bunches of wonderful carrots with the tops, washed and trimmed
  • 1 tablespoon olive oil
  • 2 teaspoons of honey
  • 1 teaspoon of harissa
  • 1/4 cup plain
  • 2% Greek yogurt
  • 2 tablespoons of tahini
  • 2 tablespoons lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons roasted and finely chopped pistachios

Instructions:

  1. Warmth the grill to low warmth. Halve giant carrots lengthwise if needed, to make sure all carrots are the identical thickness. In a big bowl, whisk collectively the oil, honey and harissa. Add carrots and toss to coat.
  2. Place carrots on grill (perpendicular to grates) and grill, coated, rolling or turning midway via cooking, till charred and tender, 10 to 12 minutes. Switch to a dish.
  3. In the meantime, in a bowl, whisk collectively yogurt, tahini, lemon juice, salt and pepper. Regularly drizzle with 2 tablespoons heat water, including extra if the combination appears too thick. Drizzle over carrots and sprinkle with pistachios.
